Watermelon, kefir, lime and mint slushie

THE SECRET INGREDIENT:
Sea salt: It might sound unexpected, but a tiny pinch of sea salt brings out the sweetness of the melon and helps replenish essential minerals lost in sweat; great for warmer weather.

Ingredients
150g watermelon (peeled and chopped weight - remove any black seeds)
Juice from 1/4 - 1/2 a lime, depending how tangy you’d like it
2 good dessertspoons of plain kefir yoghurt
4 mint leaves
Pinch of sea salt
8 ice cubes
Method:
Put all the ingredients into a blender and blitz for about 20-30 seconds, depending on your blender’s capability, until almost smooth. Pour into a large glass and garnish with extra mint leaves, if you like. Drink immediately.
Notes:
Use ripe watermelon for the best natural sweetness – it should smell fragrant and feel heavy for its size.
If you’re prepping ahead, chop and freeze the watermelon in advance for an even more cooling refresher.
